Echelon’s Copycat Park Treats
Who doesn’t love a post-workout snack! In honor of the 2024 runDisney Virtual Series inspired by favorite Disney snacks, we’ve put together a few copycat recipes of these famous park treats - with our own spin on them!
Protein Waffle
- 1 ½ Mashed Bananas
- 1 Egg
- 1 Scoop Protein Powder
- 1 tsp Vanilla Extract
- ⅓ cup Almond milk or milk of choice
- Waffle Maker
Makes 2 servings / 2 Mini Waffles each
- Mash bananas until smooth in a bowl
- Mix all ingredients together in bowl until combined well
- Heat waffle iron and make waffles as normal and enjoy!
Chocolate Dipped Frozen Yogurt Bar
- 1 cup Plain Greek Yogurt
- 1 tbsp Honey
- 1 tsp Vanilla Extract
- 1 cup Semisweet Chocolate Chips
- 2 tbsp Coconut Oil
- 4 Popsicle Sticks
- Parchment Lined Baking Sheet or Popsicle Mold
Makes 4 Bars (Recipe reference)
- In a bowl, mix plain greek yogurt, honey, and vanilla extract to a large bowl. Combine thoroughly.
- Add ¼ cup yogurt mixture to a parchment paper lined baking sheet, popsicle mold or large plate to form the bars. Place a popsicle stick into each bar. You should be able to make 4 clusters.
- Next place the baking sheet with the yogurt bars in the freezer. Freeze until they are completely frozen and solid, about 1-2 hours.
- Once the bars are frozen, melt the chocolate. Add the chocolate chips and coconut oil to a microwave-safe bowl and microwave in 15 or 30-second intervals, stirring in between each one, until the chocolate is melted.
- Remove the frozen yogurt bars from the freezer and carefully dip each one into the melted chocolate. We recommend using a spoon to ensure each cluster is thoroughly coated.
- Place the bars back in the freezer for a few minutes to ensure the chocolate hardens and yogurt solidifies a bit. Enjoy!
Healthier Candy Apple
- 2 large Apples
- ½ cup Chopped Walnuts
- ½ cup Brown Rice Syrup
- 2 Popsicle Sticks
- Parchment Lined Baking Sheet
Makes 2 servings (Recipe reference)
- Wash apples and remove stems. Push your sticks into the apples where the stem was.
- Place your brown rice syrup into a small pot and bring it to a boil over medium heat. Once it bubbles, reduce the heat immediately to low. Simmer for 2 minutes. Remove from heat.
- When the brown rice syrup has stopped bubbling, hold one of your apples by the stick, over the pot, and spoon syrup over the apple until it has a smooth, glossy coating.
- Roll coated apples in chopped walnuts.
- Set the apple on the parchment and place the entire cookie sheet in the fridge. Chill for at least 1 hour. Enjoy!
Pineapple Sorbet
- 4 ½ cups Fresh Pineapple, Cubed
- 1 tbsp freshly squeezed Lime Juice
- 1 tbsp Honey, more if needed according to taste
- Food Processor
- Parchment Lined Baking Sheet
- Line a baking sheet with parchment paper and set aside. Cut pineapple into cubes.
- Place the cubed pineapple onto the baking sheet, leaving space in between the cubes to allow for even freezing and not touching so they don’t create a giant glob of frozen pineapple.
- Place the tray into the freezer and freeze the pineapple overnight, or until completely frozen - at least 3-4 hours.
- Place the frozen pineapple into the bowl of a food processor and allow to thaw for 10-15 minutes until softens. Pulse until the pineapple becomes crumbly.
- Add the lime juice and then pulse again. You may need to add a little warm water until the mixture becomes more fluid, but not slushy. Or you can allow the pineapple to thaw a little more to soften. You're looking for a soft serve texture at this point.
- Taste and add any honey, as needed, at this time if it needs to be a little sweeter.
- If the mixture becomes too slushy and does not resemble sorbet, you can return to the freezer for 30 min. to an hour to allow it to re-solidify.
- Serve immediately, or store in the freezer in an airtight container for up to 2 weeks.
